Salsa obtenida de Pedro Ximénez, con la que se pretende potenciar el dulce de nuestras uvas pasas. Se trata de una reducción a fuego lento de vino dulce mezclado con aceite de oliva y hortalizas, especial para acompañar patés y carnes.

Esta salsa puede utilizarse tanto para servir directamente sobre cualquier carne ya cocinada como para cocinar la carne con ella, enterneciéndola antes de incorporarla ya que la salsa ya está terminada.
